Puli Kodsu

When my host again made my favorite Andhra idli [which differs from Tamil idli], I was tempted to make the ‘Puli Kodsu’ that my mother used to make for us. Following her recipe, I made it, and it came out perfectly—just as a child learns from its mother rather than from others.

In South India, various Kodzus are made in different regions, and this is one among them. Thin tangerine watery pulp, onion [small ones are much better], a little garlic, sambar powder, heeng powder, methi powder, red chili, haldi powder, mustard seeds, curry leaves, and a spoonful of broken urad dal or chana dal.

Fry mustard seeds with broken urad dal, then add jeera and curry leaves. Next, put in chopped onion and garlic [don’t use garlic-ginger paste], and fry them with a little salt until well cooked. Then, add one or two spoons of sambar powder with haldi powder and let them roast slightly [reduce the flame; otherwise, the sambar powder will get burnt]. Then, add the thin tangerine water and let it boil only two or three times. Overboiling will make the dish too thick. If it accidentally becomes thick, add hot water to make it thinner. Finally, add heeng and methi powder.

You can adjust the water according to your taste. Some prefer more savor, while others [like me] prefer less. If a few in your family like it more savory, first take out a portion for them separately, then add hot water to make the rest less savory. Then, along with other chutney and idli podi, enjoy Puli Kodzu.
